Most muffin recipes are loaded with fat and sugar. Healthy muffin recipes have merely undergone a few substitutions and additions that make these little cakes delicious and healthier to eat.
If you are looking for healthy low fat recipes, be sure they do not call for lots of eggs, sugar (I have even seen 2 cups of sugar used in a recipe), and lots and lots of butter, oil, or cream cheese. I am not condemning the use of any of these ingredients for baking except in the large amounts used.
There are so many tasty ingredients that are full of fiber and low in fat that can be added to make healthy muffins that there is no need to omit these little "goodies" from our diets.
